TGIF

Made it through yesterday without being too much of a bear!  But I tell you, it was not an easy day.  And I'm tired and ready for this week to be over.  I need a break in a big way.

I have prayed for a quiet day today so I can get some important things done.  At some point, if I don't get some quiet time I may have to come home and work to be able to concentrate.  Not something I really want to do but may have to.

Anyway THANK the LORD ABOVE that it's Friday.  I slept pretty good last night.  That helps but I'm still way under and at deficit for the week.

Home needs some loving - I've not been able to do laundry all week so it's all sitting there waiting on me.  I did get a Walmart order placed.  And happy that I was able to get an Aldi's run done this week so at least we have some groceries.

Gonna make Shepherd's Pie tonight for our St. Patty's.  It's an Alton Brown recipe.  So I'm probably going to leave a bit early today so I can get a head start.  Have to make cream potatoes first of all.  Then the rest is pretty easy.  Might have to make it in two skillets.  I don't think we have a skillet big enough for the whole thing.  It starts out on the stove top but then moves to the oven to bake after the mashed potatoes are added to the top. Looking forward to the adventures in cooking tonight - even though I'm worn out from the week and would rather be "served".  I'm trying to avoid crowds and make tonight fun for us.

We have plans tomorrow but not Sunday - So Sunday will be my domestic Goddess day.  I'll both work and play as best as I can toggle to do so that day.

Geez, I'm tired.  Hope you all have a wonderful St. Patty's!

  3. I have never tried Shepard pie. I fixed Colecannon. Mashed potatoes with cabbage and chunks of ham mixed in. I got the recipe from Bobby Flay. They all seem to enjoy. I don't like corned beef. Way too salty. I have to watch my blood pressure. Hope you have a restful quite weekend.
